Tofu Scramble (serves 4)

Tofu is a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron, calcium and manganese. In addition to this, it also contains magnesium, copper, zinc and vitamin B1.


2-3 tablespoons of vegetable oil

1 onion (sliced)

5 garlic cloves (crushed)

1 teaspoon onion powder

1/2 teaspoon cayenne pepper powder

1 teaspoon of vegetable bouillon

1/2 red, yellow & green bell peppers (seeded, sliced and chopped)

4 tomatoes (chopped)

1lb firm tofu (patted dry/drained & mashed)

Handful of fresh-snipped chives


  • Heat the oil over medium heat in a large pan and sauté the onion for 5minutes, until softened.

  • Add the garlic, onion powder, cayenne powder, bouillon, stir and cook for 1 minute.

  • Add the peppers, tomatoes and tofu.

  • Gently stir-fry for 3 to 4minutes. Sprinkle the chives and enjoy.
